Halibut roasted and marinated in miso

Ingredients

halibut, skin on

sake

miso, white

Preparation method

  • Heat the sake and mirin and flambé to evaporate the alcohol.
  • Temper the heat and dissolve the miso in the warm liquid. Stir regularly.
  • Once the miso has dissolved, add the sugar and turn up the heat. Continue to stir well.
  • Once the sugar has dissolved, set the marinade aside to cool down to room temperature.
  • Marinate the halibut in the marinade for two to three days depending on the thickness of the fish.
  • Preheat the oven to 200°C.
  • Take the halibut from the marinade and roast in the oven for approximately ten minutes.

Serving suggestions

  • In a composition with stewed beef and Chinese broccoli.
  • As an entremets or main dish with components of spinach, pak choy, green asparagus, mushrooms, fennel, and lime.
