Preparation method
- Allow the butter to come up to room temperature.
- Beat the butter in a planetary mixer until white.
- Roast the hazelnuts in the oven until golden brown and set aside to cool.
- Finely chop the hazelnuts and mix with the butter.
- Store in the refrigerator.
Serving suggestions
- As a flavour enhancer in potato dishes.
- As a flavour enhancer in vegetable dishes such as celeriac and Jerusalem artichoke.
- As a garnish or sauce on pan-fried meat or fish.
