Ingredients

single cream

bunch

parsley, chopped

½

bunch

tarragon, chopped

egg white

breadcrumbs

Preparation method

  • Boil the potatoes until tender and mash them.
  • Add the single cream and chopped herbs, and season to taste with salt and pepper.
  • Pipe the purée into neat strips and freeze until slightly frozen.
  • Cut into neat croquettes and coat with the egg white and breadcrumbs.
  • Deep-fry the croquettes at 180°C until golden brown.

Serving suggestions

  • As a vegetable garnish.
  • As a snack, cocktail snack, or amuse-bouche.
  • Delicious with cauliflower mayonnaise or mustard sauce.
