Ingredients

racks of lamb

g

aged cheese

1

 

white baguette, a few days old

parsley

g

tarragon

10

g

mint

1

clove

garlic

pistachios

As needed:

 

olive oil

Preparation method

  • Place the aged cheese, baguette, parsley, tarragon, mint, garlic, and pistachios in a thermo blender and blend together.
  • Add a little olive oil at a time until you have a smooth mixture.
  • Place a little of the mixture between two sheets of baking paper and roll out to the required thickness.
  • Allow to firm up in the freezer and cut into the required shape.
  • Fry the racks of lamb until they are cooked to satisfaction.
  • Cut a piece of the herb crust to size and place on the meat.
  • Gratinee briefly under a salamander grill.

Serving suggestions

  • As a component in a main dish with asparagus, potato, and legume components.
  • Serve in combination with artichoke, asparagus, aubergine, courgette, green legume, sweet pepper, tomato, onion, or fennel components.
