Preparation method

  • Peel the parsnips and quarter lengthwise.
  • Place the parsnips in a roasting tin with a little clarified butter and cook on the stove until golden brown.
  • Deglaze the roasting tin with the honey and the white wine vinegar.
  • Roast the parsnips in the oven until done and season with salt and pepper.

Serving suggestions

  • As a component in a vegetable dish with preparations of cabbage and mushrooms.
  • As a component in a starter with rocket, goat’s cheese, and crispy bacon.
  • As a component in a main course with pork, beef, game, or poultry.
