Preparation method

  • Allow the butter to come up to room temperature.
  • Beat the butter in a planetary mixer until white.
  • Mix through the grated horseradish.
  • Season to taste with salt and pepper.
  • Push the butter through a fine-meshed sieve and roll in plastic film.

Serving suggestions

  • As a flavour enhancer for potato and vegetable purée.
  • As a flavour enhancer in vegetable dishes such as peas.
  • As a garnish or sauce on pan-fried meat or fish.
