Ice lollies

The basic ingredient for ice lollies is a mixture with a sugar percentage of 15%. You can create endless variations on this recipe by infusing the water with various flavours, e.g. coffee beans, fresh herbs or various types of tea. For a fruit flavour, simply substitute part of the water with fruit juice.

As needed:



Preparation method

  • Bring the water and sugar to the boil to enable the sugar to dissolve. Boil briefly, but do not reduce!
  • Add the flavourings, if desired, and set to cool.
  • Pour onto sheets or other moulds and freeze.

Serving suggestions

  • As a classic ice lolly on a stick.
  • Use in a composition with components of cherries, green herbs, and lime.
  • Use in a composition with components of strawberry, chocolate and yoghurt.
  • Use in a composition with components of mango, apricot, and banana.
