Indonesian chicken thigh satay

Satay is often made with breast of chicken, but the dish is much better is made with chicken thigh pieces. These pieces contain more fat, which makes for a juicy and tasty result.

Ingredients

sweet soy sauce (ketjap)

lemon grass, finely sliced

Preparation method

  • Combine all ingredients. 
  • Place the chicken in this marinade and marinate for one day.
  • Remove the meat from the marinade and strain to remove the herbs and spices.
  • If you are using wooden skewers, soak them in cold water for at least one hour first.
  • Put the satay on skewers and cook, preferably on a charcoal barbecue.

Serving suggestions

  • As a snack, with home-made peanut sauce and crispy fried onions.
  • Individual pieces of the satay can be used as a component of a warm salad with a sesame dressing and cucumber.
