Ingredients

mushrooms

cloves

garlic

shallot

lemon

sprig

thyme

Preparation method

  • Finely chop the shallot and garlic and gently fry with the thyme.
  • Add the water and the juice of the lemon and season to taste with a little salt and pepper. Leave to infuse for half an hour.
  • Brush the mushrooms clean and place in a container that fits in the vacuum machine.
  • Pour the cooled liquid over the mushrooms, making sure that the mushrooms are not touching each other.
  • Pull vacuum on the mushrooms three times.
  • Cook the infused mushrooms until done.

Serving suggestions

  • As a filling for a mushroom soup or broth.
  • As part of a vegetarian tapas platter.
  • As a basic ingredient for a creamy mushroom sauce.
