Preparation method

  • Finely chop the onion, garlic, and sweet pepper.
  • Gently fry the onion and garlic in a pan until soft and translucent.
  • Add the sweet pepper and fry the mixture until cooked.
  • Deglaze with the white wine.
  • Add the Worcester sauce, smoked paprika, and coriander.
  • Add the squid ink and butter at the end.
  • Pour the mixture into the Thermomix and mix to a smooth purée.
  • Pour the mixture through a fine-meshed sieve.
  • Serve hot.

Serving suggestions

  • In composition with squid and molasses. 
  • As a base for risotto.
