Ingredients

potatoes, puréed à la neige

250

g

flour

½

tbsp

baking powder

1

tbsp

fresh green herbs, chopped

1

 

onion, finely chopped

 

 

salt and pepper

Preparation method

  • Sieve together the flour and the baking soda over the potato à la neige.
  • Add the chopped herbs and the onion and blend well. Add a little milk if the dough is too dry.
  • Season to taste with salt and pepper.
  • Roll the dough into a sausage-shape and cut into eight equal-sized slices.
  • Roll each slice into a ball and poach in the stock for 30 minutes.

Serving suggestions

  • As a potato element in a stew.
  • As a potato side dish, braised in sage butter.
