Ingredients

 

 

Irish moss, approximately 10% of the total amount of bouillon

 

 

chicken stock

Preparation method

  • Heat up the bouillon and place in the cafetière with the Irish moss.
  • At the table, press down the plunger of the cafetière and pour the bouillon with the dish.

Serving suggestions

  • Ideal as part of an entremets with warm fruits de mer and fine vegetables.
