Ingredients

onion

bacon, crispy fried

sweet soy sauce

1/2

tbsp

sushi vinegar

As needed:

Preparation method

  • Blanch the kale and chill quickly in iced water.
  • Finely chop the onion, place in a vacuum sealer bag with the soy sauce, and pull vacuum. Leave to marinate for a couple of hours.
  • Strain the onion from the soy sauce.
  • Mix the kale with the marinated onion and crispy fried bacon, and season to taste with sushi vinegar and salt. 

Serving suggestions

  • Serve with an amuse-bouche.
  • Serve with a starter or entremets.
