Preparation method

  • Finely blend the juniper berries in a food processor or blender.
  • Place the blended juniper berries in a vacuum bag with the oil and pull vacuum.
  • Leave the oil to infuse at 50°C for two hours.
  • Leave for at least one week before using. 

Serving suggestions

  • In a vinaigrette of beetroot and verjus.
  • The peppery and aromatic flavour also make it ideal for use in a dessert with gin and tonic
