Kale and potato stoba

Stoba is a stew that comes from the Caribbean and can be made with all kinds of ingredients. This stoba contains the traditional Dutch ingredients of kale and potato, which are combined with flavours from the Caribbean.

Ingredients

potato, cut into cubes

curry powder

Preparation method

  • Finely chop the shallots, ginger, and garlic.
  • Slice the kale into strips.
  • Gently fry the curry powder in a little oil or butter on a low heat to release the flavours.
  • Gently fry the shallot, ginger, and garlic in the curry powder.
  • Add the kale strips to the curry mixture and add 25ml water. Season to taste with salt and pepper.
  • Cook the chopped potato until cooked through. Check the potato is cooked and then drain.
  • Add the potato cubes to the kale mixture.
  • After four minutes, add the remaining 25ml water.
  • Serve hot. 

Serving suggestions

  • Serve as part of an entremets or main course.
