Ingredients

potatoes

butter

whipping cream, unsweetened

kale

smoked and confitted onion (see onion components)

 

 

salt, pepper, and olive oil

Preparation method

  • Peel the potatoes, chop into pieces, and rinse in cold water.
  • Boil the potatoes until cooked through.
  • In the meantime, finely chop and rinse the kale. Pat dry.
  • Mix the kale with the onion and season to taste with salt, pepper, and olive oil.
  • When the potatoes are done, strain, and keep on the heat until slightly dry.
  • Now add the cream and the butter to the potatoes and mash together into a smooth mixture.
  • Season the mashed potato to taste with salt, pepper, and olive oil.
  • Now take a round cutter, place the mashed potato at the bottom, and press down slightly.
  • Place the kale and onion on top of the potato and press down slightly again.
  • Make a small well in the kale and pour the port syrup into it (see onion components).

Serving suggestions

  • Can be served as an amuse-bouche.
