Ingredients

Preparation method

  • Soak the bulgur wheat in cold water for five minutes.
  • Drain well and squeeze out as much water as possible.
  • Purée the onion, chilli pepper, and fresh herbs in a mincer.
  • Add the bulgur wheat to the herb paste.
  • Season to taste with salt, pepper, and chilli powder.
  • Roughly chop the meat and then grind it in the mincer twice.
  • Add the meat and the ice cubes to the bulgur wheat mixture.
  • Knead the mixture until you have a smooth and sticky paste.
  • Spread the mixture over a plate and drizzle with some olive oil.

Serving suggestions

  • In combination with onion, mint, bread, and labneh.
  • Serve on toast or grilled bread.
  • Shape into balls and fill with nuts and butter and cook on the grill or barbecue.
