A simple preparation in which the kohlrabi, as the main ingredient, becomes beautifully crispy as a result of the ice water.

apple, Granny Smith

white soya sauce

white and black sesame seeds

As needed:

 

salt and pepper

Preparation method

  • Slice the kohlrabi into a thin julienne and keep in ice water.
  • Also slice the apple into a thin julienne and mix with one tablespoon of lime juice.
  • Cut the radishes into wafer-thin slices on a mandolin and place in ice water.
  • Dry the kohlrabi and radish in a salad spinner.
  • Mix the kohlrabi and radish with the apple and season with the sesame oil, lime juice, white soya sauce, and sesame seed mix.
  • Season to taste with salt and pepper.

Serving suggestions

  • As a salad served with pork belly with tamarind dressing and white rice.
  • In a composition with components of noodles, tuna, and shiso.
  • In a composition with components of chicken, peanuts, and aubergine.
