Fresh Breton kombu contains high levels of salt and makes for a special replacement for salt in water used for boiling. If you cook your potatoes in water with kombu, it will infuse the potatoes with a bouillon-like flavour.

Preparation method

  • Peel the potatoes and cook them in water with the fresh kombu.

Serving suggestions

  • Serve the potatoes as boiled potatoes or use them as a basis for a mousseline or a different preparation.
