Lamb chop grilled with lard

The lamb chops are first coated with liquid lard. This means you can prepare them in advance. Grilling the chops gives them a wonderfully delicious flavour.

rack of lamb

Preparation method

  • Clean the rack of lamb, making sure that most of the fat is removed from the bone.
  • In the meantime, melt the lard in a pan. The lard should not be heated up, just melted.
  • Cut the rack of lamb into chops and return to the refrigerator to become cold.
  • Season the chops with salt and coat with the lard. Refrigerate until ready to use.
  • Heat up the grill until nice and hot and grill the lamb chops.
  • Then place the meat in an oven or heating cabinet until the core temperature has been reached. 

Serving suggestions

  • The chops can also be cooked on the barbecue.
  • Serve in combination with artichoke, asparagus, aubergine, courgette, green legume, sweet pepper, tomato, onion, or fennel components.
