Lamb shish kebabs

Shish is derived from the Turkish word ‘şiş’ which means ‘skewer’. In this recipe we use lamb neck which is ideal because of the fat it contains.

Preparation method

  • Clean the lamb by removing all excess membranes and fat with a sharp knife.
  • Cut the meat into 2 to 3cm pieces.
  • Mix the spices with the olive oil and the salt.
  • Mix with the meat and leave to marinate for several hours to a day.
  • Thread the meat pieces onto skewers and grill on a water grill or barbecue.

Serving suggestions

  • Serve with Turkish flat bread, caçik (Turkish tzatziki), and thinly sliced iceberg lettuce.
  • Serve with grilled vegetables, baked potatoes, and lemon.
