Preparation method
- Clean the langoustines. Carefully remove the intestinal tract.
- Cut the tails into the desired shape. Do not cut them too small, otherwise the result will be too similar to tartare.
- Marinate the langoustines in salt, pepper, lime juice and olive oil. Make sure that the langoustines retains their sweetness.
Serving suggestions
- As a starter, e.g. with cucumber jus and pita bread.
- As a component in a composition with tomato, chicory, carrot or leek.
