Ingredients

Merlot vinegar

As needed:

 

salt and pepper

Preparation method

  • Lightly crush the garlic using the flat side of a knife and remove the skin.
  • Place the garlic in a pan together with the vinegar, the lemon juice, and the dried lavender.
  • Bring to the boil and allow to infuse for 10 minutes without reducing the liquid.
  • Transfer the vinegar mixture to a measuring jug and add the mustard.
  • Using a hand-held blender, emulsify the dressing by adding the olive oil to the vinegar in a thin stream.
  • Season to taste with salt and pepper.

Serving suggestions

  • Delicious as a sauce or dressing with fruits de mer.
  • Served with a salad with confit poultry, olives, and artichokes.
  • In a composition with components of goat's cheese, green apple, and vanilla.
