Ingredients

Preparation method

  • Bring the lemon juice, water, lemon liqueur, sugar, and lemon zest to the boil.
  • Add the agar-agar and Citras while continuing to stir and cook for another three minutes while stirring continuously.
  • Pour into a container and cool until completely jellified.
  • Blend the gel in a thermo blender until smooth.
  • Pass through a fine-meshed sieve and keep in piping bags, squeeze bottles, or a container in the fridge.

Serving suggestions

  • Delicious with tomato, basil, and sea bass.
  • Perfect with duck with celeriac and Earl Grey tea.
  • Delicious in a composition with components of black salsify, bay leaf, and milk.
