grape seed oil

Preparation method

  • Place the lemon zest and grape seed oil in a pan and heat to 70°C.
  • Set aside to infuse for at least thirty minutes.
  • Sieve the zest from the grape seed oil.
  • Store the lemon oil in the refrigerator.

Serving suggestions

  • Use in a composition with components of sea bass, cucumber, and oyster.
  • In a dessert with components of blackberries, meringue, and tarragon.
  • Delicious in a composition with black salsify, milk, and bay leaf.
