Lima beans are also known as butter beans. The creaminess of the bean combines very well with sage, just as butter and sage go perfectly together.

Ingredients

lima beans, soaked

1

clove

garlic

4

sprigs

sage leaves

1

tbsp

red wine vinegar

tbsp

Dijon mustard

tbsp

olive oil

 

 

salt and pepper

Preparation method

  • Slowly cook the beans in the soaking liquid together with two sprigs of sage and the garlic clove until tender.
  • Leave the beans to cool in the cooking liquid.
  • Finely chop the remaining sage leaves.
  • Use the red wine vinegar, Dijon mustard, chopped sage, and olive oil to make a vinaigrette.
  • Drain the beans well.
  • Marinate the beans in the vinaigrette.
  • Season with salt and pepper. 

Serving suggestions

  • In a composition with poultry such as chicken, guinea fowl, or quail.
  • In a composition with pork, apple, and pumpkin.
