As needed:

Preparation method

  • Bring the lime coulis, water, and sugar to the boil and stir until the sugar has dissolved.
  • Add the Citras and agar-agar in one go while stirring with a whisk.
  • Cook for another three minutes while continuing to stir well.
  • Pour the mixture into a stainless steel gastronorm container, size 1/1 GN, and place in the refrigerator.
  • Blend the mixture in a food processor or thermo blender until smooth.
  • Store in a plastic container or piping bag in the refrigerator until use.
  • Finish on the plate with a little lime zest.

Serving suggestions

  • Delicious with a sea bass ceviche with red chilli pepper and avocado.
  • Especially delicious in a dessert with white chocolate, mango, and cashew nuts.
  • Perfect for an amuse-bouche with oyster, ginger, and lemongrass.
