Preparation method

  • Mix the egg white, lime juice, yoghurt, and icing sugar in a measuring jug. 
  • Add the sunflower oil and lime leaf oil drop by drop while continuing to stir. 
  • Transfer to a siphon aerated with three cartridges and store in the refrigerator until needed.

Serving suggestions

  • As a component in a dessert composition with white chocolate, mint, and blueberries. 
  • As a component in a dessert composition with mango, peanuts, and coconut.
