Preparation method

  • Put all the ingredients in a pan and heat to 50°C.
  • Leave to infuse for one hour.
  • Store the oil in a tightly-sealed pot or in a vacuum.

Serving suggestions

  • As a basis for a vinaigrette or mayonnaise.
  • Turned into a foam.
  • As a flavouring in a white-wine sauce or glaze, for example.
