Maceration is a subtle form of marinating. By serving the strawberries at room temperature, the aromas of the strawberries are brought out to their fullest extent. This recipe combines strawberries with lemon to create a dream combination.

lemon, juice and zest

icing sugar

Preparation method

  • Cut the strawberries into fine brunoise.
  • Mix with the lemon juice, lemon zest, and icing sugar.
  • Allow to infuse for half an hour.
  • Serve at room temperature.

Serving suggestions

  • Delicious with balsamic vinegar, basil, and lemon.
  • Perfect with white chocolate, black olives, and fennel seed.
  • Combines well with almond, peach, and pineapple.
