Ingredients

Preparation method

  • Place all the ingredients in a food processor and blend to a paste.
  • Season to taste with salt.
  • Store the marinade in the refrigerator until use.
  • Cover the meat with the marinade and refrigerate for at least twelve hours. 

Serving suggestions

  • Marinate pork shoulder in this marinade and slow-cook on the barbecue.
  • Marinate and cook lamb neck in a sous vide system before grilling.
