Ingredients

mango coulis

ground ginger

chilli sauce

freshly ground black pepper

butter

Preparation method

  • Allow the butter to soften and beat in a planet mixer until pale.
  • Add the other ingredients and season to taste with salt and pepper.
  • Make into small bonbons or a large block like a pack of butter.

Serving suggestions

  • With grilled white fish.
  • As a topping for brioche.
