Ingredients

mango coulis

sugar water (1:1)

chilli pepper, seeds removed, finely chopped

citric acid

agar agar

Preparation method

  • Combine all ingredients, bring to the boil and cook for one minute.
  • Allow to cool and blend the firm mass into a gel.

Serving suggestions

  • As part of a dessert with Asian flavours.
  • As a component in a starter with smoked chicken or duck breast.
