Mango chips

A fun culinary illusion that will appeal particularly to children. Serve in a paper chips cone with some ‘mayonnaise’ on the side, and the illusion is complete.

As needed:


pastry cream or mango mascarpone as ‘mayonnaise’

Preparation method

  • Peel the mango.
  • Slice the mango flesh off the pit in long strips and subsequently cut into chip shapes. Use any leftover mango to make a mango coulis.
  • Serve in a paper cone with ‘mayonnaise’ of pastry cream or mango mascarpone on the side.

Serving suggestions

  • As a children's dessert.
  • As a component in a dessert, e.g. alongside a ‘mini-croquette’ of vanilla ice cream breaded in gingerbread crumble.
  • As a friandise or pre-dessert.
