butter, in cubes, at room temperature

mango, diced very finely

Preparation method

  • Beat the egg with the sugar.
  • Add half of the mango purée and juice, as well as the juice of half of the lime.
  • Continue to beat over a bain-marie until the egg yolks start to thicken.
  • Remove from the heat and add the butter.
  • Add the rest of the mango purée, and then add the finely diced mango.
  • Store in a sealed container and keep refrigerated.

Serving suggestions

  • A real treat on scones or muffins.
  • As a component of a dessert, for example mango sorbet and yoghurt crème.
