Ingredients

butter, in cubes, at room temperature

mascarpone

Preparation method

  • Beat the egg with the sugar.
  • Add half of the mango purée and the juice of the lime.
  • Continue to beat over a bain-marie until the egg yolks start to thicken.
  • Remove from the heat and add the butter.
  • Add the rest of the mango purée.
  • Let the mango curd cool.
  • Blend the mango curd in a planet mixer and add the mascarpone.
  • Stop the mixer to scrape the sides of the blender with a spatula when necessary.

Serving suggestions

  • As a filling for mango ravioli.
  • As a filling for crepes.
  • As crème to accompany a strawberry dessert.
