Mango nuggets

A variation on the well-known peanut nuggets, but here made with freeze-dried mango and white chocolate. The freeze-dried mango is a product from the ElBulli line. It absorbs liquid rapidly, but is perfect for encasing in a rich chocolate. This keeps the mango crispy and allows you to create a very unusual variant on the more conventional peanut version. Finishing with yoghurt powder gives you a light, fresh balance to the richness of the chocolate.

yoghurt powder

Preparation method

  • Melt the chocolate in a bain-marie until approximately 45°C.
  • Add enough glazing chocolate to bring the chocolate to approximately 30°C.
  • Scoop the freeze-dried mango into a bowl and fold in the chocolate to coat all the mango.
  • Scoop 'nuggets' of the coated mango onto grease-free paper and let the chocolate harden.
  • Immediately before serving, sprinkle with yoghurt powder.

Serving suggestions

  • As a friandise.
  • As a component in a dessert, e.g. as part of a selection of mango components.
  • As a component in a dessert with rice and mango.
