Mango salad with ginger, coriander and coconut
This absurdly simple recipe uses only very few ingredients, but is extremely delicious and convenient for both sweet and savoury applications. Use mangos that are unripe, this makes them easy to cut and have a bit of bite.
Makes 150g.

Preparation method
- Peel the mango and grate it on the mandoline.
- Mix the ginger and coriander, and grate some lime zest over.
- Mix in the lime juice and add salt to taste.
- When ready to serve, sprinkle with freshly grated coconut.

- As a salad.
- As a component in a dish with grilled fish.
- As a component in a dessert, e.g. with coconut components.
