Ingredients

fresh anchovies

banana shallot

olive oil

Preparation method

  • Clean the anchovies by removing the innards, heads, and tails.
  • Rinse the fillets under running cold water and place on sheets of kitchen towel to dry.
  • Finely chop the chilli pepper, shallots, coriander, and garlic.
  • Salt the fillets, cover with the finely chopped shallots, garlic, and coriander, and then cover with the lemon zest.
  • Set aside under pressure.
  • Marinate the fillets for at least six hours and then remove the garnish.
  • Drizzle with olive oil.

Serving suggestions

  • As a component in a starter with pickled cucumber.
  • As a component in a starter with an avocado tartlet or neatly cut avocado.
  • In combination with a radish component.
  • As a component in a modern Salade Niçoise.
