Ingredients

green asparagus

½

 

garlic

olive oil

sea salt and black pepper

Preparation method

  • Heat the oil to approx. 60°C and allow the chopped garlic to infuse in the oil.
  • Bring plenty of water with added salt to the boil.
  • Cut off approx. 2cm from the ends of the asparagus. This part is often quite woody.
  • Blanche the asparagus in boiling water for approx. 3 minutes until cooked but still firm.
  • Scoop the asparagus out of the water and immediately pour the garlic oil over them so that they marinate. Season with salt and pepper.
  • Briefly grill the asparagus in a hot grill pan or on the Big Green Egg.

Serving suggestions

  • As a vegetable garnish.
  • As a basic ingredient in a composition, e.g. with a salmon or lobster component.
