Ingredients

artichoke hearts, cooked

200

ml

sunflower oil

½

 

chili pepper

1

sprig of

rosemary

1

sprig of

thyme

½

clove

garlic

2

sprigs of

flat-leaf parsley

Preparation method

  • Cut the artichokes into the desired shape and pat dry thoroughly.
  • Heat the oil.
  • Finely chop the herbs.
  • Add the herbs, chili pepper, and garlic to the hot oil and gently fry.
  • Remove the pan from the heat and set aside to cool.
  • Marinate the artichokes in the herb oil for at least twelve hours.

Serving suggestions

  • As a base for a dressing, crème, or jelly.
  • As a component in a composition with anchovy, lettuce, garlic, bread, and aubergine.
