Preparation method

  • Peel the Jerusalem artichokes and cook sous vide or cook them in water with salt.
  • Cut the Jerusalem artichokes as desired or leave them whole.
  • Toast the coriander seeds and crush them.
  • Mix the crushed coriander seeds with the rest of the ingredients and marinade the Jerusalem artichokes in this blend.

Serving suggestions

  • As a component of a main dish containing game.
  • Delicious served cold with paté.
