Marinated rhubarb circles
This method of preparation makes the rhubarb taste even more intense. In addition, you can add herbs, spices, or other seasonings to the syrup.

Ingredients
- 1 stalk rhubarb
- 100 g rhubarb syrup
Preparation method
- Peel the rhubarb and use a cutter to cut out small circles.
- Place the rhubarb circles in a vacuum sealer bag together with the rhubarb peel.
- Place the bag in the sous vide bath and heat at 60°C for 20 minutes.
- Spread the circles with the rhubarb syrup until they are nice and red.
Serving suggestions
- Serve as part of a main course with duck cooked on the carcass and other rhubarb structures.
- Use in a dish with components of lamb, pumpkin, and fennel.
- Use in a dish with components of yoghurt, ice cream, and coconut.
