Ingredients

Preparation method

  • Briefly fry the meat in the soybean oil.
  • Add a little bit of water.
  • Add the onion rings and three cardamom pods and continue frying.
  • Turn the heat down and continue stirring so that the meat does not burn.
  • Leave the meat to simmer for one hour.
  • Pour the coconut milk into another pan and mix in the curry paste.
  • Bring the mixture to the boil on a medium heat.
  • Add the palm sugar and stock.
  • Dilute the mixture with a little water.
  • Add the tamarind paste, the last cardamom pod, the peanuts, and the boiled potato.
  • When the lamb is tender, add just the meat to the sauce. 

Serving suggestions

  • As a main dish on its own, served with rice and shallots.
