Preparation method
- Dice the cheese roughly and blend in a Robot Coupe until it is a fine crumble.
- Place all the ingredients in a pot and warm up very slowly to melt the cheese.
- Simmer on low heat for 5 hours to infuse.
- Strain through a fine sieve.
Serving suggestions
- As part of a main dish, e.g. with components of onion and chamomile.
- Delicious with white asparagus, potato, and chives.
- Perfect paired with tomato, chervil, and tarragon.
