whole milk

lemon, zest

agar-agar

Preparation method

  • Roast the cardamom pods in a dry pan.
  • Add all the ingredients together in a pan, except the agar-agar.
  • Bring to the boil and allow to infuse for ten minutes.
  • Strain the pods from the mixture and add the agar-agar.
  • Boil the mixture for one minute.
  • Set in the refrigerator and then mix in the blender to create a smooth crème.

Serving suggestions

  • As a filling for a tartlet or as part of a dessert on a plate.
