This is a wonderfully simple way to add a smoky flavour to a dessert. The smoky barbecue flavour gives a dish extra depth.

charcoal powder

Preparation method

  • Melt the butter in a cast-iron pan.
  • Mix the icing sugar with the milk powder, flour, and charcoal powder.
  • Add the melted butter to the mixture.
  • Use your fingers to create a crumble.
  • Pour the mixture onto a Silpat mat and bake for 20 minutes at 110°C.

Serving suggestions

  • As part of a dessert with blueberries and buttermilk.
  • As part of a dessert with tonka beans and chocolate.
