Milk froth

It's easy to froth milk, but the addition of lecithin ensures that the froth stays nice and firm. This froth is especially handy when serving large parties.

icing sugar

Preparation method

  • Heat the milk and icing sugar to 60°C.
  • Mix the lecithin through the milk mixture.
  • Foam with a hand-held blender.

Serving suggestions

  • As a component in a dessert with red fruit, apricots, banana, coffee, peach, mango, and figs.
  • Easy to flavour with spices and herbs.
