Ingredients

semi-skimmed milk

egg yolks

Preparation method

  • Heat the milk and cream to 70°C.
  • Mix the sugar with the egg yolks.
  • Pour some of the warm milk and cream into the egg yolk mixture and then pour everything into a pan.
  • Heat to 80°C.
  • Pass through a fine-meshed sieve.
  • Set aside to ripen for eight hours and churn into ice cream.

Serving suggestions

  • You can infuse the ice cream with different types of spices while it ripens.
  • As a component in a dessert with red fruit, apricots, banana, coffee, peach, mango, and figs.
