Mini-sandwich skewers

The only thing unusual about these sandwiches is their stature, but this makes them a surprising snack, amuse-bouche or garnish. Here, salmon takes the centre stage, but these sandwiches could just as easily be made with any other ingredient.

Ingredients

white bread, in long slices

cucumber

As needed:

slices

smoked salmon

250

cream cheese

50

g

whipping cream

 

 

olive oil

 

 

salt and black pepper

Preparation method

  • For the sandwich bread, mix the soft cheese with the double cream, olive oil, and salt and pepper, and spread on the bread.
  • Using a mandoline, slice the cucumber thinly and distribute the slices over the white bread with cheese spread.
  • Top with the salmon or topping of your choice.
  • Prepare as double-decker sandwiches and allow to firm up in the refrigerator.
  • Carefully slice into 3x3cm squares, and stack in pairs.
  • Fix the stacks with an attractive skewer and refrigerate, covered, until serving.

Serving suggestions

  • As a component in a lunch dish.
  • As a little snack or amuse-bouche.
  • As a side with a soup, e.g. a cucumber or watercress soup.
